Arroz Con Pollo
Arroz Con pollo is a traditional Spanish recipe that I make a lot. I love this recipe.
I’ve decided to add my favorite recipes on here from time to time and this is the first one, other than my Strange World Recipes that came from aliens and fantasy creatures.
ARROZ CON POLLO (Rice with chicken)
1 medium sized cut-up chicken (I use the thighs)
1 1/2; cups uncooked white rice
1 cup onion, chopped
1 medium-sized red bell pepper, chopped
1 clove garlic, minced
1 1/2 teaspoons dried basil leaves
3 cups chicken broth
1 tablespoon lime juice
teaspoon saffron threads
1 bay leaf
1 1/2 cups chopped tomatoes
Black pepper to taste
* Heat oil in large Dutch oven over medium-high heat
Add chicken, cook 10 minutes or until brown, turning occasionally.
Remove chicken, keep warm
* Add rice, onion, bell pepper, garlic and dried basil to pan. Cook and stir 5 minutes or until vegetables are tender and rice is browned.
* Add broth, lime juice, saffron and bay leaf.
Bring to a boil, stir in tomatoes
* Arrange chicken on top and sprinkle with black pepper
Cover, reduce heat to low. Cook 30 minutes or until chicken is tender
Remove bay leaf and serve
